Libertine social Vegas

Trying to connect with any Cooks that work at libertine social in Las Vegas. I live on the other side of the country but I'm trying to replicate the Petaluma roast chicken at home and so far unable to nail it down. Would be a great birthday present if somebody could enlighten me on what they do. From what I've figured, it looks to be a wet brine, possibly a peeking duck style skin tightening and drying in the fridge for a day or two, sous vide cook around 144 to 146? Then most likely a chill and roasted in oven pickup to bring back temp and crisp the skin? I get decent results but nothing is good as theies. Fork tender, clean cut through, probably the juiciest chicken I've ever had in my life. I'm just a dabbling home cook but my wife always talks about it and I would love to be able to recreate it.
