If I adapt one of these lens to my gfx100s would I set the leaf shutter to a T setting on the lens and use the camera as normal?

I have been shooting for a while with the gfx 100s and 32-64. Im coming from a full frame setup 100-400 and 28-75 Nikon z7 . My question is I’m looking for a telephoto lens that would replace my 100-400. I am obviously looking for an adaptive lens or could I get away with buying an F mount to gfx Adapter and just use that.

What would you all consider to be an alternative lens for the Mitakon 65 from the Pentax lineup. I have the 80-160 zoom i actually like it and have the fuji 32-64 . I’m looking for a prime preferably a Pentax so I would not need to buy another adapter but I am truly open to anything. I shoot mainly Landscapes and travel so it will have the occasional man made structure in the photo.
