Smoked pork roulade

Saw a dish here I wanted to try and recreate. Bacon covered smoked pork roulade stuffed with cream cheese and jalapenos. First time smoking a roast cut.

2.5hrs at ~250deg F until 145def F center.

It was so good. And I went overkill on the snake and ending up cutting off the last quarter of it. More charcoal for the next grill
