Going for consistency at this point. First 2 pics are from last weekend. Rest are from tonight. I used Charlie Anderson’s recipe (malt powder this time around), Serious Eats sauce (Casa Marrazzo San Marzano DOP Peeled Tomatoes are tha bomb), and a cheese blend of mozz and jack. The first one was good, but this one is better. Probably because more sauce and cheese. I did a partop. Finishing bake didn’t get the edges as dark, but they’re crispayyy. I’m okay with the lighter crust, though. Charlie said about 3/4” to 1-1/8” height is about right. I’m at 1”. Pan is 8”x10”. Cut into 6 slices and I’m full after 2. Would you buy this?

I figured the dough would be more forgiving here. Definitely stressed less making it. It’s really good, too. Deliberately light on the cheese (50/50 mozz/jack). I was invited to sell pizza at an event in a couple of months. Detroit might be the way to go so maybe I’ll hold off on the Neapolitan for now. Next test: par bake and finish in Roccbox.

EDIT - I’ve never eaten this style pizza so would appreciate some feedback on the look.

A store mailed a gift card to me that I was expecting to arrive July 7. The certified letter was picked up on July 3 and up until July 7 there was a lot more tracking info (accepted, arrived, out for delivery). Then suddenly, the day after it was supposed to be delivered, it was back to “accepted July 3” and all of the previous tracking info was gone.

Starting July 3 and up until the day of expected delivery, Informed Delivery also showed expected delivery July 7.  Then somehow on July 8, there was no delivery showing at all--and I haven't received it. This all smells pretty fishy to me. I requested and investigation and in the meantime called the store. They have a receipt for the gift card with the card number. If it was stolen, I'm hoping they’ll be able to tell me where it was spent and since it’s internal to them maybe they can pull the video footage or the register data to find a face and a timestamp. It wasn’t misdelivered either. Otherwise, I believe tracking would show that. It just...vanished.

Any thoughts on what could've happened?
