Pineapple Juice SCOBY

Hello, I have read the FAQ and it doesn't initially seem like this is answered, if I missed it apologies.

This seemingly SCOBY grew in the pineapple juice at my work. It has all the characteristics of a SCOBY and it grew in pineapple juice so I have no reason to believe it's not. Is it a good idea to try to use it for kombucha/jun? I think it might be a cool flavor, but don't want to kill anyone with poison booch. Thanks y'all!

Anyone know anything about this?

Maybe this has been here for longer, but I only noticed it within the last week. As you may be able to see, the prospective spot (presumably) is right next to Magic Kastle Coin Laundry, close proximity to Ruckel and NHS. Does this cause anyone else concern? Personally I am not thrilled about having this in town, and even less as close as it is to the schools. Just seems like something we don't need. Thoughts?

On the way To Zanarkand (help with technique)

So here is my practice-performance of "To Zanarkand" probably a bunch of people have done this song but it has significance for me and a lot of emotion, so I wanted to learn it as soon as I got my digital piano. This is about 3wks of practicing maybe 5 times a week, 30mins-1hr each time. I don't have a teacher.

I'm looking for help specifically balancing right and left hand volume. When I try to play left hand piano and right hand mezzo-forte, sometimes I don't press the key down hard enough with my left hand to make it play. Not sure if that is just because of digital sensors or whatnot. So I'm compensating by playing the right hand more like forte or fortissimo at some times and that doesn't feel right either. It could be I am simply not used to how loud the piano is. I'm a classically trained vocalist, so it's also difficult to grasp how to control dynamic color on the piano.

Obviously, my technique is below amateur, I would be fairly confident in guessing. Aside from the issue I identified above, I would appreciate any and all critiques on what I'm doing wrong, since I don't quite have the pianist's ear or feeling in my hands to know when something sounds or feels off. This week I want to transition to learning to read the sheet music and play by feeling more, until I am able to sightread like I can for vocal music.
