Tips or ideas on covering and/or removing?

Remodeling my basement and this is the finish on three 10-foot sections of drywall as it used to be part of a bedroom; literally just latex paint thrown onto a base white layer which clearly cannot just be painted over to hide. Options and ideas are very much needed.

Can these be cut down flush to the joist?

Beginner in terms of this kind of stuff but was going to do some remodeling and can't help but see these as a bit of an eyesore, can I cut them back?

This car is aggressively photogenic

The front, the back, even in profile it just keeps your eyes glued to it. Im not even sure what aspect of it is so alluring but it just seems so....well thought out.
