I already tried bluestacks air but there was some noticeable input lag

MCPE launcher has discontinued support

Parallels doesn't really run it well, same for VMware fusion.

Is there any way to play bedrock on a mac?

When I was a bedrock player I used to play Crafters MC so much, I grinded a lot on in and then switched to java. Now I wanna get back into skyblock but all I see is pay-to-win servers with 1 or 2 things wrong with them, are there any good skyblock servers on java with good progression and grinding? (I would prefer something other than Hypixel)
