Anyone have a high-protein cookie similar to Tate's Bake Shop Double Chocolate Chip?

My daughter is 5 and autistic, and one of her reliable safe foods is Tate's Bake Shop Double Chocolate Chip Cookies — the thin, crispy, super chocolatey ones. She eats them without question, which is huge for us.

I'd love to find a homemade version with more protein in it, but close enough in taste and texture that she'd still accept it. I know that crispy snap is hard to replicate, but I'm willing to experiment.

Has anyone had luck boosting protein in a thin chocolate cookie without wrecking the texture? Open to ingredient swaps, recipes, or even a similar store-bought brand that's higher in protein. Any leads appreciated — fellow autism parents know the stakes! 🙏
