Fermentation/Proofing Question

I need yall to help me understand the concept of fermentation vs proofing time. If you make a dough with enough starter that it will peak and begin deflating in 10 hrs, that would mean you need to balance fermentation and proofing in that window, right? The starter is going to be eating its way through the flour regardless of if the dough is fermenting or proofing. So how do you allocate the 9-10 hrs you have? 7 fermentation then shape then 2-3 proofing? Thanks for the help

Can I get some advice on how to know when my sourdough dough is done bulk fermenting? 425 g flour (half whole wheat half bread), roughly 50g starter, 300g water (70% hydration)

Door Problems 2008 Chevy

My ‘08 Chevy Silverado is driving me insane. It bings at me every couple minutes to tell me one of 2 doors is open even though they are shut fast. It used to only do it when I went over a big bump. Also, the electric locks don’t work, and the rear speakers (it’s a crew cab) don’t work either. Are these all connected? What do I need to replace? Input is much appreciated

Feeding Regimen Question

So I’ve been a 1:2:2 every 24hrs on my 5 day old starter because I think it was acidic. Yesterday evening it smelled excellent for the first time and had been through a true rise. I fed it 1:2:2 again and 10hrs later have what you see in the picture (top of tape is the level). I want to get it mature asap. Input on feeding regimen is much appreciated

Looking for a Game

I want to find a game similar to the campaign mode in Ultimate General Civil War, but that I could play with my granddad as the enemy. It doesn’t need to be Civil War themed but it does need to be live, not turn based. Essentially I just want a person playing the yankees while I’m playing the Confederates. Be nice if we could each configure our armies throughout the campaign
