Chicken thighs, dauphinoise potatoes & broccoli

I had some chicken thighs and one potato that needed using so knocked this up quick. Made the dauphinois with milk, cream, garlic, nutmeg and some cheese towards the end. Sauce made with onion, smoked bacon, capers, chicken stock, white whine and the leftover dauphinoise liquor. It’s a bit rough around the edges but very tasty, much like your friend and humble OP.

Double cheeseburger with bacon and blue cheese

Brioche bun, red onion chutney, x2 beef patties, Red Leicester and mozzarella, blue cheese sauce, pickled red cabbage (as I realised I’d ran out of gherkin at the last minute but still wanted something acidic), smoked streaky bacon. Triple cooked chips, beer battered onion rings and a banana milkshake. Trying to decide if I’ve still got room for the leftover jam roly poly and custard in the fridge.

Yet another chippy by the sea

Seems to be a weekly occurrence for me and the kids to be at the seaside eating chips. I swear they do eat fruit and veg 😬 The usual battered sausage, chips and scraps x2 and curry sauce to share. Bottle of dandelion and burdock for me and a fruit shoot each for them. We had ice creams too but they were melting very quickly so didn’t manage to get a pic.
Any ideas where this is?

Sausage, bean & cheese toastie

back with another garlic bread toastie. This time with sausages, beans reduced in the pan with some Parmesan and mature cheddar cheese. Spread a little of bean sauce to keep it juicy. Yorkshire tea as standard.

Gochujang chicken noodles

Found a bag of salt and chilli crispy chicken pieces and a bag of stir fry veg in the freezer. Cooked the chicken and then threw it in a mix of gochujang, honey, fish sauce, sesame oil, dark soy and rice wine vinegar. Fried the veg and added the noodles with all of the above again + chilli and garlic. Finished with some crispy chilli oil.

Bacon, egg & cheese toastie

On thick white bread that I spread with some garlic butter I made. Thick cut smoked bacon, mature cheddar cheese and some Mallorcan hot sauce that I added to the yolk on assembly. As always a yorkshire tea double bagger.

Parmo Fries

I took the kids to Stockton International Riverside Festival today and had to try the parmo fries as soon as we got there. For those of you unaccustomed to this Teesside delicacy it’s: breaded, flattened chicken, béchamel sauce and cheese. Followed it up with a couple of beers for me and an ice cream each for the progeny. A canny day was had all round.

Spag Bol & Garlic Bread

The process for this dish actually started 4 years ago when I was travelling across the Outer Hebrides and stumbled across an orphan cow. I carried that cow on my back for 7 days straight. I then hand reared it until it was the perfect succulency for this very dish.
In all seriousness though, I like my slag bol very dark and rich and left overnight to chill before eating. Also I like to go hard on the browning of the meat.
Made my own garlic bread with a shop bought baguette, half a block of butter, parsley out my garden and garlic.

Edit: the browned meat pic was just the first batch that I browned, rest assured there was more.
The way I presented it makes it look like a small portion but if I just spread it evenly across the bowl, it would have covered it.

Chicken Shawarma

served on a giant garlic naan out of my freezer. Made a little roasted garlic mayo for the base and then let some hummus down with a touch of water for the drizzle. Triple cooked chips. I put the rest of the garlic mayo in a tub to dip the chips in but didn’t take a picture because I was ready to launch the kebab out of the window trying to take a decent pic. Respect to the bossman for his presentation skills.

Another chippy by the sea

Different beach this time but the same order for me and the bairns. This was probably the nicest chippy I’ve had in a long time. The curry sauce was amazing and the scraps were almost buttery. Couldn’t resist the lemon top inception pic. The kids had chocolate ice cream but the only pictures I took of that was when it was all over my boys full face.

Lemon & Ricotta Waffles

with blueberries, lemon and mascarpone cream, fresh mint out of my garden and a drizzle of honey.
Pour over coffee to wash it down.
I saw the waffle maker lurking next to the toastie maker when I made the toastie the other day and felt bad leaving it out of the party.

Steak Nachos & Tacos

I’ve had some mini white corn tortillas and a packet of tortilla chips calling me from the cupboards for days. Couldn’t resist them any longer. Rib-eye steak, fresh shallot, refried beans, feta cheese, jalapeños, guacamole, sour cream, hot sauce. Added caramelised shallots to the tacos instead of the refried beans. Served with a bottle of authentic Mexican lager, which is definitely not brewed in the UK.

Sirloin steak, jersey royals, cavolo nero

Had a minor procedure in hospital this afternoon and couldn’t eat for 6 hours before it so this is my first meal of the day. Boiled the jersey royal and finished them in the steak pan with black garlic and herb butter. The supermarket steaks are so thin at the moment it’s hard to get a good crust and still have it pink. Tasted great but that could be the fentanyl coursing through my veins.

Tortilla, Charred Pepper, Salad

Ready made chorizo tortilla, charred crunchino pepper, salad with spinach, rocket and watercress, kalamata olives, red, yellow and purple cherry tomatoes, capers, jalapeños, cucumber, radish. Little simple EVOO/vinegar/salt dressing. Remembered I had some crispy onions after I sat down so added them (not shown). Salad is a bit slapdash, my apologies, I was hungry.

Been hunting high and low for some white pudding for ages and finally found the holy breakfast trinity (fresh blood black pudding, white pudding & haggis) in a farm shop in Tebay Services. Cumberland sausage ring, dry-cured smoked back bacon, mushrooms, beans, 2 fried eggs (1 hidden underneath the other), hash brown, 2 fried slices. Yorkshire tea double bagger to wash it down.
