I got excited I forgot to toast the bread. Didn't have white bread so used potato bread. I know it's missing cheese but back then, I didn't care for cheese plus lactose intolerance. Funny story. I was watching TV sitting in the living room while eating my sandwich. I got up to go into the kitchen. Came back and saw that my poodle ate the rest of my sandwich.

PB & J advice

I’m not American, so my mom never made me PB&J growing up. I love them now, but I feel like I always mess up the peanut butter-to-jelly ratio.
Is this about the right amount of PB and J, or am I still getting it wrong?

Tony’s Bologna

Mortadella on Brioche with Dijon, mayo and provolone. Served with miniature heirlooms, tossed in rice wine vinegar, S&P with a balsamic drizzle.

EDIT. This sandwich landed me an executive chef job at a local gastro-pub. They liked my other offerings as well, but THIS sandwich is what they (the 10-person judgement board with which I was interviewing) unanimously said was the reason they called me back. Not my locally sourced black angus burger with bourbon-bacon-onion jam, not my spicy pork belly with honey-gochujang, (which they all did love also), but THIS sando. I ended up putting it on the menu with a local ciabatta, and thic-cut tallow-fried potatoes, seasoned with salt and pepper, paired with choice of Peroni or Negroni for $25 and it flew out the dang window as fast as I could make them. Saturday nights I was manning a grill specifically for this sandwich while the rest of the staff worked the rest of the menu.

"I have croaked, madame"

I was left with 3 dumb pieces of bread... Then a bolt of stoner innovation hit me like lightning. Make a "egg-ina-nest" club! Fry up the egg in the center piece, set aside. Open face griddle ham/American and pepper turkey/cheddar. Then combine in a glorious, dippy-centered, gooey, crunchy, and warm sammie. It was heaven

From the bottom up:
Avocado with everything but the bagel sprinkled on there
Thin sliced red onion
Homemade thick cut maple bacon
Thin sliced chicken breast reheated in bacon fat
Homegrown Heirloom tomatoes (pineapple) cracked black pepper and salt
Spring mix
Mayo
All between homemade fresh baked sourdough

Homemade spicy sausage over balsamic caramelized onions and a heaping tablespoon of grain mustard and ice cold German beer

Coleslaw on the side. Sausages are smoked and have leeks in them.
I make this annually, not very photogenic this year but it was 10/10.

Dont zoom in on my girlfriends chest I WILL find you…

Chicago Style Italian Beef sandwiches made from scratch

Made Chicago Style Italian Beef Sandwiches for dinner to celebrate watching series finale of The Bear. Homemade chicago style sub rolls freshly baked that morning, homemade hot and mild giardiniera which been marinating in fridge for a week and dutch oven roasted beef from local butcher. Absolutely delicious!
