Spanish Queso Fundido Grilled Cheese

First time cooking a grilled cheese since emigrating to Spain. Went to Aldi up the street from my VRBO and bought a loaf of Spanish rustico brand bread, a pack of queso fundido sandwich slices, and a bottle of Hellmans Mayonnaise (pleasant surprise). Had to memorize the stove and timing as it’s very different on a Spanish countertop stove vs the gas stove I had back in the states.

Epitome of a Melt...The Classic Patty Melt (Homemade)

Caramelized onions; pan deglazed w/apple brandy from Maine. 80/20 ground beef seasoned w/salt, pepper, onion powder, garlic powder.

The meat was then throughly mixed w/6 kraft American singles until it’s all melted. Then I mixed my caramelized onions back in.

Sandwich is assembled first by toasting two slices of pepperidge farm sourdough bread using hellmanns mayonnaise on a warm lodge castiron griddle.

Once toasted; I spread a sauce made from heinz ketchup, frenchs mustard, Hellman’s Mayo, and leaand perrins Worcestershire sauce on each toasted side, add another Kraft single to each side w/burger mix in between.

It’s then put back on the griddle until the cheese is melted and the outside is nice and toasted. Mine was a little dark, but delicious nonetheless.

Check out my [Tortellini]

This is the first meal I’ve cooked since arriving as an immigrant in Spain. Still getting the hang of Spanish supermarkets and finding what I need. Also limited with pans and cooking utensils on hand at my VRBO

Fried Cheesy Goodness

Moving back to Spain, I went to one of my favorite places to eat when I lived here before. One of their appetizers is basically a basket of fried cheese. In this one we got mozzarella sticks and I think the rings were queso fundito

Cesco Burger

One of my favorite places to eat living in Spain 🇪🇸 both back with the military and again 7 years later is called Pizzeria de Francesco located in beachside town Sanlucar De Barrameda. This is their Cesco Burger which consists of the following:

Hambueguesa de Tenera 200g (veal burger)
Queso Cheddar
Bacon
Lechuga (lettuce)
Tomate (Tomato)
Cebolla à la plancha (Grilled Onion)

Served with Patatas Fritas (French Fries)

Apple Brandy for Caramelizing Onions

One of my favorite albeit expensive alcohols for caramelizing onions...Sadly I had to give it away when I moved from my house. But not to worry, southern Spain is full of amazing wines and sherry so stay tuned.

My own creation

When I worked at a restaurant as a sous chef, I experimented with making different burgers for my employee meal that were not on the menu. I call this one the "Eddie" all beef patty, grilled onions, mushroom, Swiss, chipotle Mayo on a pretzel bun
