

Week 20: Jams and Jellies - Apple gochujang jam

I used the recipe linked above and this was a best case scenario of r/ididnthaveeggs. This is why mise en place is important.
This week's CSA, I received some gold rush apples from the local farm that are great as is, but I prefer apples in dishes, so I decided on jamming it. It's been a busy few days and I forgot to buy apple cider vinegar, which the recipe calls for, luckily I have a few worthy substitutes, like lemon juice. Crisis avoided. Started making it, crisis hit again. Never had I imagined that cinnamon was lacking in my house, and it's a pretty important component here. Okay, let me add other stuff I have then; allspice, nutmeg, cloves, ginger, star anise. Taste test was decent but missing that warm earthiness from the cinnamon, so I added a heavy pinch of gochugaru. Better, but still.... Okay, heaping spoon of gochujang then. I tell you what, this is sweet spicy amazing!
