Almost 40% of my fine dining experiences have been bad

I've gone to 13 fine-dining restaurants in my life, 9 michelin star rated, and 4 others that don't have one. 5 were bad experiences.

Bad meaning the food was absolutely bland and mediocre (with exceptions of course), or even bad.

Special mention to ABaC, which was my first experience ever.

Then, Kissa Tanto in Vancouver, a fancy 150$ sushi in Tokyo, a 2 start in Spain, a 1 star in Spain... Experiences that after leaving the restaurant we felt like we have been robbed because the food was absolutely not worth it.

Is this normal? I had just bad luck with the menus or what? The 2 starts for example was recently granted the 2nd (less than 1 year when we went) and had a 4.8 with more than 1k reviews in google maps...

But it's starting to feel that going to such restaurants is a hit or miss and they are very expensive...

Recommendations for japanese-western fusion in Japan

Hello, mid-end July we will be in Japan (Kyoto, Kanazawa, Takayama and Tokyo), and besides going to good only-Japanese restaurants, we are looking for a good fusion one, preferably French but also open to Spanish or Italian.

We are from Spain, and we've eaten extensively both in Italy and France, so we are looking for the Japanese part to prevail.

I've read good things about Respiracion in Kanazawa. Any other good recommendations? Budget about 150-200€ per person.

Any remarkable ice cream place?

Hello. I'm an enthusiast of ice cream and wherever I go, I like to go to the best ice cream place and/or the most special one in the city.

For example, in Paris I went to one that offered a degustation menu of 20 flavors, some of them really weird. In Munich, I went to one that served very weird flavors (including one with worms) and so on.

So, is there any special ice cream place like that in Tokyo? If not, which is the regular best ice cream in town?
