My brother wanted something to go with hotdogs so I taught him to make a warm German potato salad. It's easy with basic ingredients.
What was great were the leftovers. I heated them in the microwave topped with a fried egg for breakfast.
Always start potatoes in cold water. This helps them cook evenly and gives a better texture.
Always start bacon in a cold pan. This lets the fat render and melt away gently, and prevents the strips from seizing and curling.
Dice *a small onion* or 1/2 a large onion and add to the bacon fat and cook on medium heat until the onions begin to turn golden, about 8-10 minutes. Stir occasionally.
To the pan of onions add:
1/4 cup white vinegar or white wine vinegar
2 Tbsp water
2 Tbsp sugar
(optional teaspoon of mustard, whole grain is nice)
Then add the potatoes and most of the crumbled bacon. Toss. Serve warm or room temperature with the rest of the crumbled bacon on top.
Taste and adjust seasoning before removing from pan. Add another spoon of sugar if you like a more sweet n sour profile. Add more vinegar if you like it tangy.
To easily minced parsley, rinse and dry it ahead of time. It will mince up easier and be fluffy. Mincing wet parsley smashes and bruises it (but better than nothing).
We are in California. three people in a family went out. ended with one man attacking two women. The women defended themselves but got knocked on the ground. they were mostly defending themselves by dragging the man off of the women. He was smashing them onto the ground. He was mostly just going after one woman and the other one got knocked down by trying to drag him off.

Police and 911 called by one party. now we are being interviewed about elder abuse ( not by police) because he got some bruises on his arms while we were trying to prevent him from hurting /killing one. that one went to the hospital with several stitches in the head. he was stronger. has memory issues and likely some dementia.

At the time, police were called and the woman who wasn't knocked out declined to press charges against the elder relative.

we're being told it's interviewed as elder abuse and we are shocked and his story is changing into being more benign like helping us. his son in buying into his storyline.

I minimized the issues that were happening at the time because I thought I was protecting that person but now they are trying to establish that our stories aren't consistent and it's very upsetting and wondering if we are better off pressing charges against him.

I didn't roll the enchiladas, I just made a layered dish. An American casserole if you will. I thought this sub may be the best for tortilla advice. I think the tortillas were too fresh and they are dissolving in the sauce. They are commercial tortillas I bought in California Costco. I still have sauce, chicken and cheese so I want to go again. can I age the tortillas in the oven or something? I don't mind it but others do. I suppose I could try a rolled pair under the broiler so it doesn't have time to get soggy. thank for any tips
