Is it realistic that it was truly a “one-time thing” and then just friendship?

I’m trying to understand a situation and would like honest outside opinions.
A man in a relationship met a woman and had sex with her on their first meeting (he says it was spontaneous and initiated by her). After that, they kept meeting occasionally over the next few months (February–May). According to him, after that first time, everything became strictly platonic and they only met for coffee and talked.
In May, his partner visited him and noticed frequent calls and phone activity from that woman during her stay, which led to a confrontation.
His explanation is that he was being careful so the other woman wouldn’t find out about his partner.
He insists that after the initial encounter there was no further intimacy.
I’m trying to understand how realistic this sounds.
Is it actually believable that two people who had sex once, then continue seeing each other for months, would genuinely stay only “friends” with no emotional attachment or anything continuing behind the scenes?
I’d really like to hear honest opinions from both men and women who have experienced similar situations.
