Anyone ever seen this inside a potato and/or know what it is? I did a quick Google search and "Hollow Heart" was the closest I saw but this one isn't hollow. It also isn't soft, feels just like the white part. I didn't eat it, am just curious to know what it is.

Purchased this ring while traveling in Victoria, BC. I have been looking for an opal ring and found this one in a shop for 50% off the regular price. Total after discount and out the door was $1003 USD. Did I get a good deal or did I overpay even with the discount?
