Digging up a massive sweet potato harvest this morning

We hit the jackpot! some of these are absolutely huge weighing over 2 lbs. It is not my first time planting them, but I have never harvested this many and huge sizes (some) at once. They are in the garage curing.

Look at the size of these sweet potatoes!

Had some extra special help in the garden today. The grandkids came over to help harvest and unearthed two giants!

I honestly didn't expect them to be this massive. Safe to say the boys were thrilled. Unfortunately we had to stop digging due to rain. More to come

Potato Leek & Bacon

This is the best version of this recipe I've made so far!

I'll post a link to the printable recipie in the comments!

The tweaks I made this time:

1.) 2 extra strips of bacon (which I left in the bottom of the pot when I cooked the leeks) [you may not need to add extra but my lovely wife likes to sneak bacon from what I put on the side and I didn't want to come up short].

2.) Added a few whole cloves of garlic in the last 2 mins of cooking the leeks.

3.) Instead of 5 cups of chx broth I subbed one cup of beef broth. (Great trick I learned from this sub!!)

4.) Extra pepper, like a bunch, fresh cracked, before pressure cook.

5.) big spoon full of sour cream after pressure release.

6.) blended until super silky with an immersion blender!

Hope you guys give it a try! We loved it! It was already a staple now it's a hit!!! Feel free to ask any questions I love talking soup!!

(i know they have a bit of potato scab but it’s harmless and comes off when scrubbed and or peeled!)

The results of my latest underground (growbags) excavation project. Behold the spuds!!!

Spent the afternoon playing in the heat and walked away with this beautiful pile. Some of these little guys are absolutely adorable, but hey - a potato is a potato LOL!

Planning to leave as is and cure for a week since it is 13 pounds and it is only two of us. Anyone else harvesting their potatoes right now? How did your crop turn out this season. Best season ever for me. I am truly thankful!!!!

When To Add Potatoes and Carrots?

I am going to do a pork shoulder roast tomorrow. The recipe says to add the carrots and potatoes at the beginning of an 8 hour cook. I am using thin skinned white potatoes and baby carrots, and I’m afraid they will be mush. I’m looking for guidance about when to add them. AI says two hours before the end, but I don’t trust AI so am looking for some human opinions lol. Help please.

EDIT: Thanks for all your suggestions. I will try putting them in halfway through.
It is always nice to be able to get the opinions of people who have cooked it before. Recipes sometimes only go so far. I have read many recipes with different instructions. They don’t always work as stated lol.

Our city had a Kartoffel-Flut! I put up 20 jars

A local nonprofit focused on reducing food waste organized a giveaway of 21 tons of russet potatoes and I was lucky enough to get down there. Took about 100lbs home with me, gave away about half to neighbors, and pressure-canned what was left.

Normally I put up 7-14 cans a season (best year my garden had was 2023 when I grew & harvested 41lbs), so this was a stretch. I’m still waiting to harvest my own garden - kennebecs and Yukons - so we’re gonna end up with a waaaay more than usual.

I use the UGA instructions but this year I actually did an ascorbic acid soak (previous years I used lemon juice)

I’d love any recipes y’all have to share! We usually use them in chicken noodle soup and for breakfast skillet potatoes but I’m thinking I need to expand beyond that given the volume on hand 😅

P.S. the German word for flood (flut) is quite similar to the German word for pretty (flot) and I gotta say, this was a flot flut for sure!
