Pinks and plums

Does anyone know how/when a pink “graduates “ to become a plum, or is it a specific age? Obviously a period is not required to be a plum.

My niece on my husband's side (his sister's daughter) is about to turn 3 and we're running into an issue. My niece's birthday has been on or the day before/after Mother's Day each year and my sister/brother in law always have her birthday party on Mother's Day. My husband and I have gone and don't get me wrong, I LOVE my niece and love celebrating her. However, sometimes I want to spend Mother's Day with my mom and I'm expecting our first baby too. I've looked up Mother's Day in the next 10 years and its 8/10 the same weekend as her birthday. My sister in law takes it very badly when we mention going to see my mom for Mother's Day, saying she wants the family together; it doesn't matter to her, as she's with her mother (my MIL) and her daughter that day. My parents, my sister in law and my husband and I all live in 3 different states so going to both is not feasible. I don't want to punish my niece for her birthday and I understand having birthdays around holidays can be tricky but on the other hand I don't think its fair that I can never make my own plans for Mother's Day. My husband and I can certainly see our own families, but my SIL gets upset if I'm not there too. what can I say?
