

Recommendations for hard bottom?
125g starter
325g water
10g salt
500 g bread flour.
Stretch and folds 3 times, 1 hour apart.
Set to poof on counter for about 3 hours
Cold proof in fridge overnight.
Preheat cast iron in 500 degree oven. Baked covered for 25 mins, uncovered 20 mins.
I keep getting bread with a hard bottom. I’ve tried rice on the bottom before but then the bottom came out softer than ideal and it took forever to cook. The dough almost felt over proofed when I got it out of the bowl but it shaped well. I can’t seem to get a good ear either.
Encopresis issue coming to and end?
We have been battling encopresis for a couple of months. Daily MiraLAX and fiber/probiotic supplement with a lot of fluid. Today he finally had a normal looking bowel movement 🙌. As sad as it is, I’ve never been so excited to see poop lol. I’ve been waiting for this to hopefully make some more progress with potty training. He is doing pretty well all things considered but this encopresis has really held him back getting to that next step of recognizing when he needs to go since it just happens.

4 stretch and folds and decided to add in about 3/4 cup of chocolate chips during last stretch and folds.
Bulk ferment overnight, about 11 hours. It was very slightly sticky on top but very bubbly, jiggly, and doubled in size.
Cold fermented for about 5 hours since I was busy.
Baked covered at 500f for 25 mins. Then uncovered for 20mins. Bottom is a little hard which I’ve experimented with the baking a little bit. The crumb is pretty airy. Most of my others have come out very dense and I bake in Dutch oven with a sling.
Should I push fermentation more?
