TBK Tavern is just hot GFS.

Didn't super wanna make this post- was gonna give them a chance to go through growing pains, but it's just too egregious at this point.

TBK Tavern, formerly the Brew Kettle Mentor, is flat-out fleecing the Mentor populace. When the restaurant opened, the menu advertised local food- Cleveland Kimchi, Euclid Fish, Shagbark Seed & Mill grits and tortilla chips, etc. 90% of the kitchen was scratch. Now, less than three months into its opening, the menu still advertised local ingredients and still portrays themselves as a real kitchen, while nearly everything served just comes from GFS, is heated up, and served. Run-of-the-mill grits, shittier quality chips, the beef for the burgers has gone from wagyu to bullshit bargain-bin beef.

The chef has proven over the few months that he simply no longer cares about the food or the quality of his work. Constantly leaving items out of recipes without disclosing to customers that we're simply out of the items. I came onboard to cook. Not to reheat pre-made garbage. I can no longer take it. They charge entirely too much for what you receive.

Make your own choices- but this one isn't a good one, imo.

What temp do you set your griddle to?

One of my cooks will jack the flat top up to 500° whenever she comes over to work that station. It leaves the whole thing charcoal black in less than an hour. I'm just wondering what temp your guys have found to be the most efficient/best?

What Could I Do?

One of my cooks extra-roasted some garlic. Too dark to turn it into puree like intended. What would y'all do with this? We have a tavern in case you need an idea of the type of food we have. Pizzas, hot dogs, smash burgers, some fish, etc.

I will admit that a pepper plant able to grow through solid stone is a hardy and good plant, I really don't want all of this flattening to be for nothing.
