Help please: gluten free, vegan, no bell pepper "traditional(ish)" thanksgiving

Hi all; first please be kind. I'm not vegan myself, I'm pretty inexperienced. I am trying to expand my horizons into the vegetarian kingdom, but that's not really what this post is about. I will be hosting Thanksgiving this year for a pretty diverse crowd. On one hand I have my dad who's a meat and potatoes kind of guy. That meat is almost always chicken. He and my mom do NOT eat bell peppers due to "allergies" (acid reflux?). On the other hand, my MIL is both Vegan and Gluten Free. There is sort of this unspoken expectation that I will provide a traditional Thanksgiving experience. The last time I hosted I ended up making 3 main dishes in order to satisfy all the dietary constraints (which suuuuuucked). Thus far the plan includes: green beans, mashed potatoes, cranberry sauce, vegan gravy, pecan pie (if I can find a good GF crust), and ???? for the main course. I did a pretty good vegan/GF Mac n "cheese" a few years back using cashew sauce but I lost the recipe, I'd like to do that too. TLDR: please help me, I need 1)vegan/gf pre-made pie crust recommendations 2) vegan/gf cashew Mac n cheese recipe recommendations 3) ANY ideas for main courses that are gf, vegan, no bell peppers, and preferably meat like. Thanks to everyone in advance, any ideas are welcome. Bonus points for things I can make ahead of time as our kitchen is small.

Edit: I'm just about in tears, y'all are saving me. Thank you all so, so much.
