Interesting foam on apple cinnamon ginger soda

Started yesterday. Boiled ~30g roughly chopped ginger and a stick of cinnamon in 1l apple juice from concentrate for a few minutes, then took the ginger out and left it to cool with the cinnamon in. Once cooled, added to a bottle and topped up with ginger bug (estimate 1/3 cup). Fermenting well, but I noticed a massive bubble on the top separating some of the foam from the rest. It kinda deflated when I opened the bottle but rose back up when I closed it. It went away when I tipped the bottle upside down. Is it something to worry about, or just odd foam? I'll check on it later anyway.

Beginner test recipe for 400ml jar (request)

I'm wanting to get into fermenting hot sauces as I like fermentation (I ferment my own sodas and mead) and I like hot sauce, but I don't want to be spending money on proper jars or lots of peppers and special ingredients before I understand the process a bit better. I've got a 400ml jam jar that I want to make a test batch in, but recipes are annoying. The "simple" recipes I've found tend to have one or more of these problems:

- Are in American units (ounces are the worst because I never know if they're talking about fluid ounces or weight ounces)

- Don't say how much final product there will be

- Measure final product in teaspoons/tablespoons (seriously tho if you're getting to the point of counting more than like 3 tablespoons, pick a new unit. Also tablespoons and teaspoons are barely a standard measurement, especially for solids where weight could be given instead)

- Are massive batches

- Use some obscure ingredient that I can only get online (I'm in the UK our shops sell like 3 spices total)

It seems like a really interesting hobby but these things are definitely putting me off. Could anyone help me to find (or give me) a simple recipe that can be made in a 400ml jar, uses metric units, and gives me a rough idea of how much sauce I'll end up with by the end? The main spicy peppers I can get near me are birds eye chillies and scotch bonnets.

Another UK heatwave post... Ginger beer this time

Started this one this morning, been less than 10 hours and it's like this. Experimental recipe that I haven't tried before.

Boiled 100g finely chopped ginger, a fair amount of ground ginger, and a pinch of allspice in 1l spring water for ~10 minutes and left overnight to steep. Eyeballed the sugar, but it was roughly 100g, and it was a mix of granulated sugar, unrefined cane sugar, and honey. Poured through a sieve to separate most of the ginger, then added a bit back for flavour. Added to a 1l bottle and topped up with gingerbug.

Pineapple soda took less than a day during UK heatwave

Started it yesterday afternoon. Blended 450g frozen pineapple with 1l spring water and filtered out the pulp through a mesh bag. Mixed with 60ml active bug and let it sit overnight. Photo was taken after 2 hours in the fridge and an attempt at burping.

Outlast (+ Whistleblower) as my first horror experience - a review

Ok so I put a post on here a few weeks ago about how the only horror game I've ever played is Dredge and I don't think I've ever watched a horror movie and I'd be making the jump straight to Outlast. I finished the Whistleblower DLC today so I thought I'd talk about what I've found out about Outlast and horror games in general on here.

Talking about the main game first, it's a really great game. It got my heart racing a fair few times and I enjoyed the experience and the story conveyed. It was a good length, and I loved reading the lore in the documents and notes, and how it showed Miles being affected by what he was seeing. "Trager juice" and "god help me, I think I've seen the walrider" were where I saw the kinda breaking point. I also liked a lot of the imagery spread across the game, especially the Prometheus painting in Wernicke's office near the end. Really good. Trager was my fav character tbh, he could take my two fingers lmao.

Now, Whistleblower. I honestly wasn't as big of a fan, didn't get into it as much. I think part of it was the length, it was way too short, only like 3 hours long for me and I'm not exactly fast at games in general. For it to happen at the same time as the main game but be less than half as long was disappointing. The way to go was a lot harder to understand, I felt like I was just running into walls or in circles until I saw a random vent or something that wasn't telegraphed in any way. Batteries weren't as much of a problem as in the main game either, I spent most of my time at like 4-5 batteries and never felt like I was gonna run out. Also, Eddie wasn't built up enough for me to care anything about him. If he was meant to be the big scary bit, the devs missed by a long shot. The same could probably be said about Trager (mi amore) but he came right after like 3 big chases and felt a lot more threatening to me personally.

Of course, I'm not saying I \*hate\* Whistleblower, not at all. It's still a good bit of extra content, I liked how Waylon's notes felt a lot more "human" than Miles', and I also liked how you got to see the aftermath of the main game throughout. It's a great experience, I just wasn't as big of a fan.

I'm looking for some recommendations, but they need to be:

\- fairly cheap (I don't think I've ever paid more than like £25 for a game before)

\- similar hardware requirements to Outlast (my laptop doesn't even meet Outlast's requirements lmao)

\- OR cheap on PS4 (second hand prices are pretty similar to new where I live so I'd prefer them to be just cheap overall lol)

I don't have any preference when it comes to style of game, preferably singleplayer, but I'm open to anything. I'm excited to hear your thoughts!

PSA for new meadmakers: GET A HYDROMETER BEFORE STARTING ISTG

Edit: this is not meant to be rude or anything it just does get on my nerves a little bit. I'm open to friendly discussion about most things, I don't want to scare anyone away from this great hobby.

Ok so I'm fairly new to mead but I try to help as much as I can on this sub, but so many people go in without getting such an important piece of kit as a hydrometer which makes it really difficult when they ask questions about their mead, like when to bottle, is it done, what's that funky smell, etc. It's an expensive hobby anyway, please just spend the extra $10/£10 to get that amazing piece of kit. When you ask a question on here, give a recipe, hydrometer reading, and your notes. It helps a ton.

Slight sulphury smell from plum bochet

Recipe (OG 1.052), measured out to be about 1.5 gallons with the fruit in:

720g hilltop blossom honey (boiled for ~20 minutes)

3l nestle pure life spring water (+50ml when rehydrating yeast)

3kg plums from my plum tree that I froze last year in airtight bags while they were ripe, and there were no signs of rotting or anything when I got them out, thawed overnight and depitted afterwards

1tsp pectolase

1tsp fermaid O (added in 1/4tsp increments today, yesterday, and the day before, and the final one will be on Sunday)

1 pack Lalvin 71B, rehydrated as the packet said

On Sunday, I sanitised everything and mixed together the plums, honey, water, and pectolase, and let the pectolase do its job overnight. I didn't have a mesh bag for the fruit, so I just added them in as they are because I'm fine with cleaning up a bit more mess after.

On Monday, I rehydrated and added the yeast along with 1/4tsp fermaid O.

On Tuesday, I added another 1/4tsp fermaid O and stirred for a minute or so to get some gas out. It smelled fruity and there were lots of bubbles when I stirred.

On Wednesday (today), I added another 1/4tsp fermaid O and stirred again. Even more bubbles, but less of a fruity smell. I'm not sure exactly how to describe it other than very lightly sulphury. I know it's a sign of yeast being stressed, which I thought was odd as I'd added nutrient in proper doses and the brew was staying at a pretty consistent 19°C (66.2°F). I tried to take a hydrometer reading, but the plum pulp was mixed into the mead too much and stopped it from sinking properly.

It's not my first mead, I've got a traditional one bulk aging at the moment which had the same nutrient schedule and I don't remember there being any problems to do with smell, but I have a terrible memory.

I think I've given all the information possible, but I'm happy to answer any questions. Should I just let it sit and hope, or is there some kind of change that needs to be made?

Outlast 1 as a first horror game?

For context, I've never played a horror game (except maybe Dredge if that counts as horror) and never watched a horror movie or read a horror novel, but I've been watching a lot of videos on the Resident Evil games recently so I was kinda in the mood for something scary and Outlast was on sale and worked on my laptop, so I bought it. I've only played the first few minutes so far (stopped because it's 2AM and I'm not playing a horror game right before bed) but it seemed pretty scary. I know it's kinda subjective, but is it a good first horror experience?

First fruit mead! 1gal. plum bochet

Hydrometer said 1.052. Boiled 720g honey for 15 minutes then mixed it in with 3L spring water and 3kg plums that I froze from last year and spent an hour taking the pits out. Gonna let the pectic enzyme do its job and then add the yeast (lalvin 71B) tomorrow.

Good 1 gal. plum mead recipe?

I have a plum tree in my front garden and I'm hoping to use some of the fruit for a mead this year, but I'm still pretty new and would like to know if anyone has a recipe they've already tried that I could steal? I'm not the best at understanding flavour combinations and stuff so I don't want to do it from scratch lol
