Spicy Tuna with Bang Bang Shrimp

Here is another roll we are working on in my restaurant. I’ve been looking for a good way to make spicy tuna without the usual suspects of just sriracha

So I did steam carrots, daikon radish, Fresno peppers, chili oil, sriracha, rice vinegar, salt, sugar, garlic and ginger. That is what I mix my fresh ground tuna in. Topped with 4 oz of fried tempura shrimp tossed in our bang bang sauce. Enjoy!

Rainbow Roll

Spicy tuna inside with cucumber and sliced cucumbers with salmon, tuna and avocado on top with drizzle of togarashi aioli, eel sauce and red topiko. Not a fan of the plate-ware but getting new plates in a few days. Any tips. Thank you!
