R58 over pressure

Rocket R58 boiler pressure issue after accidentally shorting the thermostat
I’ve recently been servicing my Rocket R58 and ran into a bit of a problem.
While the machine was turned on, I accidentally touched the thermostat with a set of pliers, and it made a very loud pop. I soon found out that the thermostat had burned out, so I ordered a replacement and installed it.
After replacing it, I noticed that the machine seems to heat up a little faster than before.
However, I’m now having an issue with the boiler pressure. The pressure goes well beyond 1.5 bar. I checked both relays and they seem to be working properly. The LED indicators are also behaving normally and aren’t staying on continuously, so it doesn’t seem like the relay is permanently stuck on.
The strange part is that when the machine heats up to around 2 bar, I get a sudden gush of steam. I assume this is coming from the pressure relief/safety valve.
I’m not quite sure what’s going on here.
Could the thermostat replacement be related to this? Or is there something else in the pressure control system that I should be checking?
Any advice from anyone familiar with the R58 would be greatly appreciated!

My first try at Cold Brew

Hi. Just joined this sub and hope to learn more. I roast my own coffee so I'm exploring how to make cold brew so I can hopefully market it in the future.

I'm using a 1:12.5 ratio.
600ml room temp drinking water
48g medium ground coffee (Ethiopia Bensa)
21 Clicks on a MHW3 Bomber grinder
Steep for 10hrs in the fridge
Use a Pourover filter to separate the ground once done.
I get about 530 yield of Cold Brew.

Tastes smooth and pretty sweet. But less of the floral notes that I'd imagine it to be. Any advice or thoughts welcome! Thank you!

Did a few batches totalling up to 5kg+ for a order. Unhappy about it. Advice?

Roasted about 5kg for a cafe order. I usually roast in the morning. Usual weather is about 29-31c. Weather was slightly colder at 27c today because it rained. Unhappy with my roasts because the graph on my Artisan was all over the place. Some batches even had burnt chaff due to the initial charge temp. My ET reading was quite high. Couldn't adjust much as I pretty much had the profiles set. I don't know what went wrong? I checked everything such as exhaust fan etc. Nothing is blocked. Is it the weather that affects my roast?

Bought a used Breville Infuser for 300ISD

Giving this to my younger brother who's just about to start his coffee journey. Scored this from a friend for cheap. Plan to pair with a better grinder.

A few things I plan to mod before giving it off. 9 bar OPV spring. Maybe find the right dial to display the pressure readings rather than just guessing the breville's 'friendly' brew pressure gauge.

Do something about the steamwand maybe? Any other mods welcome!
