What gets you to try a cuisine you've never eaten?
I've noticed I do not pay a lot of attention to a cuisine right up until I get a story attached to it. Listening to someone talking about a dish they grew up with, or watching an iconic movie scene built around a meal, for me personally does more than any review ever has.
Also convinced every cuisine gets adopted through one gateway dish, and it's never the most traditional one, usually it's more whatever overlaps with what people already eat.
