

Became vegan about two weeks ago, how am I doing??
I’ve only snagged these two pictures and they were by far the most ‘attractive’ looking meals (there have been some uggo plates let me tell you 😭) but I’ve been having so much fun being creative with meals - when I ate an omnivorous diet I was so lazy and I rarely cooked or was so intentional about nutrition!
First one:
- Mixed leaf salad, cucumbers and red sweet peppers in an olive oil, balsamic and maple syrup dressing
- Squeaky bean chorizo
- lidl no-chicken schnitzel (so yummy but I can’t find it in store atm)
- a dollop of Lidl guacamole
- mixed grains
Second one:
- Asda organic tofu
- Tesco plant menu chicken pieces (not too keen on them though)
- pan fried in and seasoned with soy sauce, chilli soybean crisp and garlic
- long grain rice and bulgar wheat
- Black beans
- Green lentils
