My girlfriend (18F) gave me (18M) an ultimatum regarding motorcycles. Has anyone dealt with this?

I’m in a really tough spot right now and I honestly need some mature advice from people who have experienced this.
For years now, I’ve been going through cycles with motorcycles. This is currently my 4th "phase" where the urge to get a bike returns with full force. I just can't shake this passion off, no matter how hard I try to distract myself with other things.
The main issue is my girlfriend. She is absolutely terrified of bikes and gave me a strict ultimatum: if I ever get on a motorcycle, she will break up with me. Because I love her and wanted to avoid a massive drama, I already told her I wouldn’t get one. But the truth is, the desire is still eating me alive. Between school, financial stress, and trying to keep the relationship stable, I feel completely overwhelmed and burnt out.
I know her reaction comes from a place of love and fear for my safety, but the "it's me or the bike" ultimatum feels incredibly suffocating.
Have any of you dealt with partners who were completely against riding? How did you manage to find a compromise (starting on a small scooter, taking advanced safety courses, investing in top-tier gear to ease their mind)? Or did you eventually have to choose between your passion and your relationship?
