Save the soaking liquid from dried mushrooms for plant-based soup

When you soak dried porcini or shiitake, the water picks up mushroom flavour too. Lift out the mushrooms, then strain the liquid through a fine sieve to remove grit before adding it to a soup or stew. Count it as part of the liquid the recipe calls for, rather than adding extra water on top. Cook the mushrooms and broth as directed by your recipe and the packet; soaking alone isn’t the cooking step.

UK takeaway allergen information should be available twice

For a takeaway ordered online or by phone in the UK, information about the 14 regulated allergens must be available before you buy and again when the food arrives. It can be provided in writing or verbally, so a missing label isn’t automatically a breach. For a mixed order, asking for each container to be labelled also helps identify which meal is yours. This doesn’t replace asking about gluten cross-contamination during preparation.

Halloween minis can have different ingredients from the full-size version

A familiar candy name is still worth checkig when buying Hallween packs. FARE nots that mini and fun-size versions can have different ingredients from the larger product, and manufactuers can change ingredients between years. Check the exact package rather than relying on last year’s list. Keep the outer packaging available when splitting up a multipack so the ingrediant information stays with it. If a loose sweet can’t be identified confidently, choose a clearly labelled alternative insted of guessing from the wrapper’s colour. Read the current ingredients and allergy statements, and contact the manufacturer when something is unclear.

Gluten-free vegan gravy: mix the cornstarch with cold broth first

For cornstarch-thickened gravy, mix the starch with cold broth until smooth before heating it. King Arthur’s simple gluten-free gravy uses 2-3 tablespoons of cornstarch for 2 cups of broth: first whisk the starch into half a cup of the cold broth, add the rest, then cook over medium heat, stirring until it thickens. Choose the vegetable broth and vegetable oil options for a vegan version, and check the broth, starch and seasonings for gluten-free suitability.

When a gluten-free bake goes wrong, the flour isn’t the whole story

A lot of gluten-free baking questions start with “I followed the recipe, but it came out crumbly.” It helps to know what actually went into the bowl. Which flour blend? Were the ingredients weighed? Was anything swapped or reduced?

The pan can matter too. Half a batch in the same pan makes a thinner layer, so even a shorter bake might be too long. And if the recipe includes a rest, check the batter after that rest before deciding it needs more flour or liquid.

For the next attempt, try changing just one thing. If the flour, liquid and baking time all change together, it’s hard to know what made the difference. A photo of the inside after cooling, along with the recipe and any changes, gives people a much better chance of helping.
