Do knife brands actually make any difference after a good sharpening??
For context, I'm not talking about the cheapest Amazon China shit brands.
But if I was to get a decent entry or mid range chef's knife, around 40-50 bucks.
Isn't all the magic in a sharpening?
Does it actually make any sense to spend $200+ on a knife or can I spend a quarter of that and as long as I sharpen regularly, that would work better?
