How did I do, guys? It cuts a lot better for sure. It was very wedgy before. I didn't take a before photo but it was pretty much like this choil shot off Meesterslijpers.

Used a pink brick and lost track of hours but probably around/under 10. Took off around 5 grams of steel.

Just got my new Shinkiro 240 a few days ago and I am loving it. The way it cuts carrots so smoothly is quite scary. Had heard great things about Nihei's grinds but still managed to surpass my expectations.

I don't usually like damascus or any sort of fancy blades but this one just works for me aesthetically. A beautiful mix of somber, rustic, and fancy.

I was nervous about buying a pricy knife to bring into a pro kitchen and have already managed to snap a tiny fraction of the tip off by touching a hard surface with it and the meat delivery guy dumped 20 kilos of meat on it haha. Luckily no damage or we would have been throwing hands!

Made me curious to ask what knives do you feel unlocked a new level of cutting performance for you? For me, it's definitely this knife and previously my Ashi.
