I’m beyond overwhelmed with choices. Please someone recommend their lowest spoon vegetarian resources?

So many of the content creators look like they’re living in cramped 1 bedroom apartments with ikea furniture. I promise I’m not elitist! But it makes me feel doubt in this process. At the same time it helps to do guided affirmations and learn more about the old school laws in contemporary language and situations. Can anyone recommend content creators who are authentic? Please no AI.
