First brisket on the Big Green Egg: advice for a lean British flat?

Hi everyone, I’m cooking my first brisket on the Big Green Egg this Saturday and would really appreciate some advice.

A quick explanation of the cut, as it’s not the typical American brisket. It’s a 3.6 kg (just under 8 lb) Aberdeen Angus flat brisket from Costco here in the UK. It isn’t a full packer with both the point and flat. It’s just the flat, cut and trimmed in the British style, so it’s considerably leaner and has much less of a fat cap. I’ve attached a photo so you can see exactly what I’m working with.

We’re planning to eat on Saturday evening. My idea was to put it on early in the morning, cook it indirectly, then allow it to rest for a few hours once it’s ready.

What temperature would you run the Egg at for a lean flat like this? Would you wrap it, and if so, at what stage? I’m also wondering whether foil, butcher paper, added beef tallow or some liquid would help stop it drying out.

What internal temperature should I start checking for tenderness, and does an early-morning start sound realistic for an evening meal?

Hi all, I’m cooking my first brisket this Saturday and could do with some advice.

It’s a 3.6 kg Aberdeen Angus flat brisket from Costco, so the British version rather than a full American packer. I’ll be cooking it indirectly on the Big Green Egg.

We’re planning to eat in the evening, so I was going to put it on early in the morning, give myself plenty of time, then let it rest for a few hours once it’s ready.

What temperature would you run the Egg at, and what internal temperature or tenderness should I aim for? Any tips on trimming, seasoning, wrapping and stopping it from drying out would be really appreciated.

Best bars/sports bars in Albufeira for England vs Croatia

A group of us are coming over to the Algarve for a 5 night golf trip in June and staying at The Patio Suite Hotel, Urbanização Pinhal do Concelho, 8200-593 Albufeira, Portugal.

We’re planning to make the England vs Croatia game on Wednesday 17 June our main night out. Kick-off is 9pm.

Looking for recommendations for good bars or sports bars nearby to watch it. Ideally somewhere with a decent atmosphere but not completely chaotic or nightclub-level hectic.

Happy to get taxis/Ubers if needed.

Also wondering if we’d realistically need to book anywhere for the football or if we’ll be fine just turning up a bit earlier?

Finally got this finished and pretty chuffed with how it’s turned out.

My dad and I built the whole outdoor kitchen area ourselves over the last few weeks. Pergola, slatted panels, and the housing for the Big Green Egg.

The Egg is now firmly centre stage and ready to go. Just need to christen it properly.

Planning my first cook this week, thinking something fairly safe to start with, maybe a chicken or some burgers, then build up from there.

Any tips for a first cook on the BGE, or things you wish you’d known early on?
