To make home made sugar free marshmallows
TLDR; New to cooking/baking and don’t have enough knowledge about food chemistry to know what’ll work and what won’t. Can’t use eggs, refined sugar or butter (negotiable) and would like help w substitutes.
So I’ve been on a health kick (a year to date) and now after a year of abstaining, I want to start having some cheat meals every now and then. I’ve thought about making ‘protein’ brownies (with chocolate whey) would fulfill both my insane sweet tooth and make the macros a little less horrifying.
Since anything I cook would be shared by the family, I can’t use eggs bc of religious beliefs. I can use dairy and other dairy products like butter but personally I’d like to avoid butter since it’s pure fat (but I am willing to compromise). I won’t use sugar at all but I have access to both stevia and monk fruit sweeteners.
Can anyone help me w the appropriate substitutions to make even a semi-decent brownie/cake?
