Alfredo stuffed shells with my new addition 🍑

I've had the peche oval casserole on my wish list for monthsssss after seeing it in person at the outlets! Finally grabbed this last week and decided on some Alfredo stuffed shells. I made the stuffing with grilled chopped up chicken, spinach, ricotta, an Italian blend of white cheeses and some Italian seasonings. Homemade Alfredo sauce as well. Will definitely add this into the rotation! I love how crispy the edges got in the casserole dish and just slid right off 😁

Dinner courtesy of my sea salt babies

Used all sea salt beauties tonight! Blackened mahi mahi in the everyday pan, crawfish cream sauce in the small braiser, and lemon butter garlic roasted asparagus in my au gratin dish 🤗 Also served with coconut jasmine rice, courtesy of Uncle Ben and my microwave 😁

Dinner tonight in the 5qt Bleu Riviera braiser 😻

Tonight I had a vision for a creamy pesto pasta concoction and this is where I ended up lol I made a great batch of pesto over the weekend that I needed to finish up so this was the perfect solution. I diced up a few chicken tenders, sauteed in garlic pepper and a mix of regular olive oil and Calabrian chili oil. Then I made my Alfredo sauce with my favorite cheese blend from HEB. It really is the perfect mix of cheeses for Alfredo sauce, I will cry if they ever stop making it lol Then, I swirled in some of my pesto and added the 3 cheese tortellini. Also finished it off with another swirl of the Calabrian chili oil, which may or may not have been a great idea because it was a lot spicier than I expected 🥵 All in all, great dinner!

Finally played with my chip and dip today

Finally used my new chip and dip today! One of my husband's favorite things I make is my stuffed mushrooms. Had the idea to turn it into dip instead. So instead of adding the stuffing inside the mushrooms, I chopped up and sauteed the mushrooms and just added to the mixture. Success 😊 Also points for using my everyday pan to cook everything off before assembling, she really is a little workhorse.

The perks of working from home, I can start dinner at lunch time 😁 I seared off some extra thick cut pork chops and let them braise low and slow all afternoon in the oven in my 5qt braiser. They are fork tender and delicious. Then I did some baby gold potatoes in my au gratin dish. I melted some butter, olive oil, seasonings and grated parmesan in the dish while the oven preheated, then added my steamed potatoes cut side down to crisp up. Lastly my favorite easy green beans in my small braiser, cooked with a little butter and Kinders lemon garlic butter seasoning 😊 None of it is healthy, but all of it is delicious 🤣

Today I made orange chicken! Used my 4.5 qt flame Dutch oven as a deep fryer. Made my sauce and assembled in my 5 qt Bleu Riviera braiser. Rice, courtesy of Uncle Ben's ready rice, and egg rolls by HEB Sushiya 😁 Was damn good!

Even though it's hot as hell here in Texas, I still wanted chili 😁 Made this massive batch for two people lol We'll eat off this for 2 days, then the rest will go in Souper Cubes in the freezer. Chili is one of my favorite things to batch cook, it always reheats so perfectly 🥰 And YES, as a born and raised Texan, I put beans in my chili!!!

I have had my eye on this set for the longest time but the cocotte in sea salt has been out of stock and impossible to find! I signed up on their website to be notified when it was back and lo and behold, got the email last week 😁 We do a lot of appetizers for dinners around here so I know she'll be put to good use. My husband has already requested my stuffed mushroom dip to break her in 😁

What other ideas do y'all have for dips or appetizers?
