Coyote

Coyote

Guy next door gets bears and bobcats. All I ever get are coyotes. Yes, I know the date is wrong, I have no clue how to set it and mostly don't care. Time is right though. This is right behind my house and the parade starts early afternoon. We are overrun with coyotes and I know we all have good reason to be not so fond of them, but this sure is a pretty one.

Question. Porcelain coated or not? Which do you prefer.

I don't think I have ever seen a porcelain coated frying pan. I have lots of frying pans and griddles, but my go to dutch ovens are the porcelain coated ones. Lodge, ain't paying a fortune for the french stuff. I have regular old cast iron dutch ovens, is there an advantage over the porcelain coated ones?? I always bake beans, never put them on the stove anymore. I use the porcelain ones for a lot of stuff. Roasts and turkey breasts. I have several if different sizes and they seem to hold up well. Opinions???

Is hitchhiking dangerous?

Yeah, it can be. It is MUCH more dangerous to the hitchhiker than the driver though. It is MUCH more dangerous to females traveling alone. But, overall is it dangerous? Shit happens, and when shit happens it hits the news. Spin the bottle. Is the hitchhiker a serial killer? Is the driver a serial killer? Who knows. For both parties the most important thing is trust your gut. If someone stops to pick you up and it does not seem right, decline. If you get in the car things don't seem like (like topics drifting to sexual things) get out. I don't care if you are in the middle of bumfuck Egypt. Get out. Say you are carsick and have to puke, or have the runs and need to hit the bushes. Try to get out in a populated area, but get out and run like hell. I hitchhiked a lot in the 70s. I guess it was normal back then, but there were lots of interesting experiences. I'm a guy and I don't know if it was ever totally safe for a female. I never felt in danger. I had a guys wife crawl into the back seat and decided I needed some attention. So, I trusted my gut and GOT OUT! About an hour later. Forgive me, I WAS a teenage boy. I think that the overwhelming majority of people are good people, and the ones that are not your gut can spot fast. I'd not be afraid to hitchhike now and I pick up a lot of hitchhikers. I pick up hitchhikers and if where they are going is reasonably close I'll take them there even if I am not going that way. Sometimes I slip them some cash for the road. I have NEVER had a bad experience picking up hitchhikers, my main fear is ..... bedbugs. Not kidding there. For reference I am in the United States and in the south east. I grew up in that southern gun culture and yes at times I was armed. Young men are stupid. I strongly advise against having any type of obvious weapon like a knife or gun. You are far more likely to end up in jail when the cops find it on you than any situation where you might use it. Don't be afraid to hitchhike or pick up hitchhikers. Just trust your gut and use common sense. Happy travels!

Confession. I really don't like to roast coffee much. It is a chore :)

It is not a hobby or me. It really is a chore. The trajectory of WHY I roast coffee is kinda weird. Years ago, my wife fell in love with Coffee Connections La Manita Peaberry. I loved it too. Then Coffee Connection sold the to biz Starbucks and the exclusive right for the peaberry went with the sale. Starbucks roasted it like every other Starbucks coffee. WAY too dark for the coffee. Starbucks could roast a dog turd and it would basically taste like every other coffee they have. I get it is a West coast thing and I am totally not hating on West coast coffee. So after floundering about for a while I decided to try my hand at roasting. I bought one of them hot air roasters. That was a mistake :). I am old and half deaf and you think I can hear first crack over the freaking hot air thing??? To compress a really long learning curve and story into something manageable I ended up buying a Behmor (which I totally love) and found La Minita beans online. Not peaberry. Forgive me I know I am a hick, but I can not taste the difference between peaberry and not peaberry. I am totally and completely sure I am not roasting the La Minita to its full potential. My wife is happy. I am happy. We are too old for sex, but we love our coffee. I have this single roast profile. Just one. It totally is not my hobby. I buy 50lbs of La Minita and seal it up in mylar bags with oxygen absorbers. I go at it hot and heavy with the Behmor. I wish I could tell you my weight. Its just a inch or so under a certain spot on a mason jar :). Designed to not overfill the freaking jar when roasted. I go wide open to first crack and at the end of first crack I go exactly one minute and 15 seconds and then drop beans and let them cool in the Behmor. I totally know the rest of you folks can make some yummy coffee, but what I am doing just plain runs circles round supermarket coffee. Like that was a fair comparison. So, ya know, I roast when I have to.
