Veils are starting to break on a few of my Melmac strain shrooms. I’ve read conflicting information… harvest when veils break or when the stipe is soft like a marshmallow?

Melmac in a medium sized tub. Just introduced more ffe via fanning twice a day starting today. 2 weeks since mixing
