Today’s lunch was one of my favorite kinds of meals—a little bit of everything.
The “lazy deviled eggs” have become a staple because they take almost no effort but satisfy the craving.
Instead of making traditional deviled eggs, I just slice hard-boiled eggs in half and serve them with a quick sauce:
1 tbsp mayonnaise
½ tbsp Dijon mustard
1 tsp hot sauce
A sprinkle of Cajun seasoning
I dip each bite into the sauce instead of piping it into the eggs. Add a handful of olives, and I’m happy.
The rest of the plate is carrots, celery, apple slices with peanut butter, pretzels, and walnuts. Simple, filling, and perfect for a shared lunch.
Featuring whatever I can find in my fridge before grocery shopping tomorrow.
