I’ve been seeing all the cromboloni posts all over social media but I don’t have the moulds 😭

Pistachio / Strawberry Cruffins (croissant muffins) filled with flavoured crème diplomat and dipped in white chocolate. 100% hand laminated.

In the days before my period I just crave sweet and salty snacks 😭 To fully optimise the number of chocolate pretzels I lovingly donated some of my salmon to my kid lmao 🤣

Breakfast:
Frappuccino with light whipped cream (152 cals, 19g protein)

Morning Snack:
Iced green tea with green tea boba 🧋 (46 cals, 0g protein)

Lunch:
Sausage pasta with mushrooms, peppers and Parmesan 🧀 (219 cals, 15g protein)

Afternoon Snack:
0% Greek yogurt with chia seeds, mango & fibre cereal (259 cals, 17g protein)

Tea:
Homemade chicken bhuna, tarka daal, pilau rice and mini naan bread (582 cals, 35g protein)

Total: 1259 cals, 86g protein, 21g fibre.

Today was an unexpected stay at home day, so just working with what I had in the fridge/freezer. I batch cook a lot and am happy to share any recipes. I love this sub and all your ideas - would love the chance to give back!

Also if anyone has ideas on how to bump up the fibre (without supplements if possible) please leave a comment!

Meals I had today for ~1200

Breakfast: (152 cal, 19g protein)
Salted Caramel Frappuccino with light whipped cream

Lunch: (403 cal, 38g protein)
Tuna Salad with lettuce, cucumber, potato, corn, olives, jalapeño. Topped with parmesan and extra light mayo

Afternoon Snack: (229 cal, 16g protein)
0% fat free Greek yogurt, raspberries & cherries, chia seeds, fibre cereal

Tea: (395 cal, 15g protein)
Jjangmyeon - Korean black bean noodles with pork, courgette, potato, onion and carrots

Total: 1178 calories, 89g protein, 24g fibre

Whilst making the noodles I accidentally added too much black bean paste, so I ended up having to add more noodles and splitting the protein/veg further.

Silver lining: might enjoy a mini pack of smarties tonight instead!

I’ve been practicing making croissants using all the tips I’ve read from here and elsewhere online.

Today I decided to go dairy free so my daughter could enjoy them too. And because they were dairy free I decided to go all the way with an egg free glaze, making these croissants vegan 🌱

As luck would have it, I achieved my first honeycomb and am overjoyed!
