Verification Texts While Abroad

I'm going to Europe in October, and I'll be there for the entire month. I'm going to use an eSim like Orange, which gives me a French phone number, and my local straight talk number will not work on the European cellular network.

If I get something from an app, like my bank for a fraud alert, that needs an authentication text, how do I go about dealing with that? Anybody have any experience?

To keep it simple, I will be at the Grandhotel Giessbach, leaving 10.10.26 and I have a train to Italy at 9:00. Am I going to have many options getting back to the bahnhof in Brienz to make my train?

This has been pretty difficult to look up online. It has been rather confusing. I looked at on-foot directions (only about an hour walk) but it has you walking through a tunnel?
