


260 calories plate of cookies!
I’ve been having those everyday as an afternoon snack!
260 calories and 20g of protein for the whole batch.
The texture is great, halfway between a cookie and a muffin too.
Recipe:
Ingredients:
20g all-purpose flour
20g oat flour
10g oat fiber
20g Prozis Speculoos protein powder (read notes, this will make or break your recipe)
1/4 tsp baking powder
Pinch of salt
Sucralose to taste (read notes)
100g water
Toppings shown:
12g frozen wild blueberries
6g chocolate chips
Instructions:
Mix all the dry ingredients together in a bowl
Add 100g of water and mix until just combined. Don’t overmix.
Preheat oven to 350°F. While the oven heats, place the dough in the fridge to chill.
Once oven it ready, shape the cookies however you like, they won’t spread much and will mostly keep their shape while baking (I use a silicon baking mat, but parchemin paper also works).
Add your toppings.
Bake for 16 minutes.
Wait 5 minutes and they’re ready to eat!
They keep very well in the fridge for a few days and they’re just as good cold.

It’s the one that has given me the best results for this recipe. A vegan protein powder is required because it absorbs a lot more water and creates the right cookie texture. Regular whey protein won’t do it, honestly don’t even attempt it 😅. I’ve also tried OWYN Vanilla vegan protein and it also worked, just not quite as well.
-For the sweetener, I use pure sucralose from Amazon. It comes with a tiny scoop and I use 1 scoop for this recipe.
