Honestly after playing across a few platforms the table itself matters way more than I expected. Basic strategy is basic strategy but how the variant is set up changes everything, single deck vs multi deck, whether surrender is available, what the dealer does on soft 17. Been burned enough times by tables with bad rules that I now check all of that before sitting down.
Side bets are the other thing people either love or completely ignore. I mostly skip them but occasionally the right table makes them feel worth it.
