Pork Loin Jerky

Hello fellow jerkers! First time making pork jerky. Not the same flavor as beef, but still very good and way cheaper. Marinade was a bottle of Allegro hickory smoke marinade with the same amount of water. Most of a head of garlic, tbsp of black pepper and Trader Joe's South African smoke. Used with 4lbs of pork loin.

First Brisket

First Brisket in the books! Cooked on my Flagship 1100. 225 until stall, then up to 275 for finish. Took 11hrs before putting in the side box at 150 for 8hrs. Need a little more salt in the rub, but very impressed with how well it turned out.

Carnitas

Tried Meat Church's carnitas recipe with a 10lb butt. Needed two cast iron skillets in addition to the Dutch oven.

Cheap Light Covers

OEM used signal lights designed to be way up in the air right next to the HMI. We didn't want to spend a ton of money on having custom covers made or a dimmer stack light (Class 1 Div 1). I was in Harbor Freight buying a $5 hog sprayer and thought they looked just about the right size. A few holes and some zip ties later and everyone is happy
