I just got this for my birthday from my mom, she bought it at a small town charity auction and there is no certificate, she wouldn't tell me how much she paid for it, is it authentic? It also came with the enamel pins and fanny pack, we're located in Central Michigan

Jose gourmet mackerel in curry sauce

So this was my work lunch today, first mackerel I've tried from Jose gourmet, I had it with snapdragon laksa curry noodles (brothless) on the side, first impression when I opened the tin was the delicious curry aroma and the thickness of the sauce, my tin was cold because I had my lunch stored in the break room fridge, which honestly worked really well with the hot noodles and probably made the thick sauce stick to the fish really well, the fillets themselves were very nice, a bit firmer than other mackerel I've tried, which also might be because they were cold, i didn't mind the firmness at all and it made for a hearty protein, the curry was not overly spicy but very very flavorful, and I can't say it enough, thick and rich, this has been my favorite Jose tin so far, I feel like each one I try is better than the last, I'll definitely be getting more of this stuff!

Pickle shot

This stuff is weird but I found it delicious I drank half the bottle last night just as shots between beers, there is a slight, almost chemical taste to it but I think that's just because it's vodka and not actual pickle juice. I want to come up with some cocktails using this, i know it would definitely be fire as a martini.

La Curiosa stuffed squids in ink

Ok y'all, special one today, I've been nervous about trying tinned squid, as I've said in some other posts, but I was feeling saucy today after yesterday's successful d&d session and I thought I'd celebrate. Hoo boy, this one was definitely something else, I feel like I'm just now truly learning the definition of umami. When I opened the tin, there was the initial visual shock of the jet black sauce, and the rich seafood aroma, and I had to work my way up to popping one in my mouth, when I finally did, I was blown away by the flavor. It was so rich, very "oceanic" but not what I'd call fishy. As far as texture, the outside was a bit firm but not tough, chewed very easily, but the star of the show was the tentacles inside, which have always been my favorite (and unfortunately less and less common) part of fried calamari, they basically melted in my mouth. I made the ramen brothless, drizzled the chili oil all over and mixed it up into this evil looking, but delicious lunch. I give this one 5 stars, it was amazing!

Sneaky back room snack: vigo mussels in escabeche

So I'm at work and didn't want to make the quarter mile walk to the break room, and hate eating tins in my car so I just found a little corner in the back room for a sneaky snack. What can I say, they are mussels, the sauce is good, if just a little flat, it could be the salt content, these were quite salty, that was dominating the flavor. Aside from that, the texture of the mussels was very nice, plump and not at all gritty, this is a Walmart budget buy, around 4 dollars if I remember correctly. I have another vigo tin, stuffed squid, that I've been hesitant about, but these gave me hope, all in all a good, but not show stopping tin, I was pleasantly surprised.

My stash

I need to build some shelves in my tinned fish cabinet so I can separate and display them better but my stash is growing fairly respectable, I've got my cheapies, Meijer and Sunny Sea sardines in hot sauce, reese smoked oysters, polar smoked Herring, Cole's smoked trout with lemon and pepper, King Oscar sweet chili mackerel, better goods smoked trout with juniper berry, and vigo smoked mussels, and I've got my primos, la curiosa truffled sardines, stuffed squids in ink, small scallops with chili and garlic and in galacian sauce, güeyumar grilled sardine tails in spicy marinade, Island Creek littleneck clams with garlic and chili and sungold mack pack, fangst sea herring with white pepper and ramson and smoked blue mussels, nice cans sardines with rosemary and fennel and sardines in tomato and pepper, Jose gourmet horse mackerel in picked sauce and in curry sauce, fishwife smoked trout with red chimichurri, wildfish cannery habanero smoked coho, and great lakes smoked whitefish with lemon and dill. What do you guys think? Should I round it out with more cheap tins?

La Curiosa mussels in spicy marinade

This was my work treat today, ate them out of the tin with vlasic pickle balls which I dipped in whipped cream cheese on the side. This was my first ever tinned shellfish and it was so good, I didn't detect a significant amount of heat but it was ok because it really let the taste of the mussels shine through. The texture was very different from traditionally cooked mussels I'm used to, the marinade was subtle and very slightly spicy, I'm definitely adding these to my regular rotation, if you haven't tried these you should go for it, I was a little nervous about it at first but I was very pleasantly surprised.

Tonight's dinner for my wife and I, I had the spicy olive oil and she had the Spanish lemon, both were delicious as a pasta topping, it was almost like a really fancy tuna casserole, the side is breaded ravioli and risotto balls, not bad for a lazy dinner

I finally got my package from fishnook the other day and this was my first tin, I had it on original Pringles and after it was gone I shelled and put the sweet chili pistachios in the leftover oil, it was delicate and flaky and buttery, the flavor was light and fresh, this has been the best trout I've had by far, the fatty parts under the skin made me do the food dance. Unfortunately none of the other tins I got this time are Jose, but I'll be trying more varieties from this brand for sure.
