Sloppy Joes

Sloppy Joes

Sloppy Joes are one of those dinners I forget about until I make them again and wonder why I don’t make them more often.
I make mine homemade with ground beef and a sweet, tangy sauce, then pile it onto toasted buns. Nothing fancy, just a really good, messy dinner.
Does anyone else still make Sloppy Joes regularly? And the important question: do you add cheese or leave them classic?

Apple Cider Whoopie Pies

I wanted the apple cider flavor to actually come through, so I reduced the cider before adding it to the batter. That made a huge difference. I filled them, wrapped them individually and refrigerated them overnight, and I actually liked the texture even more the next morning.
I’m definitely keeping these in the fall baking rotation.

Shrimp Rangoon Toast

If you like crab Rangoon, this is my shrimp-on-toast version of that idea and it’s dangerously easy to eat
I brush baguette slices with garlic-infused olive oil and toast them first, then top them with a creamy shrimp and cream cheese mixture with green onion, lime and lemon pepper. Back into the oven until everything is hot and bubbly.
Crispy underneath, creamy on top, and these disappear FAST whenever I make them.

Creamy Mac & Cheese

I finally landed on a homemade mac and cheese that I love.
I make the cheese sauce from scratch with a roux, half & half, milk, a little cream cheese, garlic and Dijon. My favorite cheese combo is sharp cheddar + Gruyère.
You can eat it straight from the stovetop or bake it with extra cheese and breadcrumbs. I’m a sucker for the baked version.
What’s your must-have cheese for homemade mac and cheese?

Pumpkin Lush

Made this pumpkin lush and my family absolutely loved it. It’s layers of spiced shortbread crust, sweet cream cheese, creamy pumpkin cheesecake filling and cool whip.
Kind of like pumpkin pies cousin.
It’s a 9x13 dessert too, so it’s perfect when you need something that’ll feed a lot of people

Loaded potato soup season has officially started at my house

Made loaded potato soup with potatoes, bacon, cheddar and green onions. It turned out thick, creamy and exactly what I wanted now that the weather is starting to feel like fall.
Definitely one of those dinners that’s even better with a ridiculous amount of cheese and bacon on top.

Creamy Crab Salad

I made a creamy crab salad that reminds me of the kind you’d get from a good deli counter, only fresher and easy to make at home. It’s made with imitation crab, a creamy dressing, a little crunch, and just enough seasoning to make it good for sandwiches, crackers, lettuce cups, or eating straight from the bowl.
