Halp, please. Can't drift/lose my tail end with R3 Moza.

Now I am new to the sim racing scene, as such I bought the R3 thinking that's probably a great place to start. It has been soo far. Even if I can't get this fixed it is very fun to drive with and who knows, maybe I just suck but I have been driving for a long long time.... it should translate pretty well, especially on a game like FH6 which is far more arcady than simmy.

My problem lies in this: Whenever I power over to get a drift going, or say I lose the ass end of the car I spin out, BADLY, almost no recovery (my prefered method of dealing with this is to release the throttle, turn my wheel with the drift/loss till the momentum dies but then soo does all my speed. I don't have a handbrake that's...intuitive to use as it's the P button on the wheel and I haven't bought the handbrake yet)

any advice would be great, I have played with the settings, I am primarily on FH6 right now but I do have asseto and iRacing to try out after FH6 is completed. So with all that info, anyone got any advice?

I totally will take criticism here on myself as well, I don't solely believe it's a hardware/software issue, it could be me just sucking but I'm pretty sure I know how to save a car that's lost it's ass.
