Another Fried Chicken Sandwich

Posting recipe again for anyone new.

Recipe:

Dry is sifted flour, baking powder and salt. Wet is Eggs, buttermilk, shot of vodka (or any 80 proof liquor), and spices. Pound chicken out pretty good to create some tears in the meat. Brine for a few hours, pat dry, dry dredge, wet, then dry again.

Dry: 2 cups sifted flour to 1 tablespoon baking powder, 1 tablespoon salt

Wet: 3 cups buttermilk to 2 eggs, dry spices (garlic, onion, dill, parley, oregano, or anything else you can find), 1.5 ounces of 80 proof liquor.

Pound chicken in a freezer bag until it’s half the thickness and has tears in the bone side of the meat. Brine for a few hours. Pat dry. Dry-wet-dry. I usually loosely roll the chicken in the final dry dredge, rather than press the flour on to the meat.

Fry at 345-355 for 5-6 minutes or until golden brown and cooked through.

Crispy chicken thighs with guajillo and ancho pepper sauce

Dry brined the chicken thighs, then smoked them on the recteq at 400 for 40 minutes.

Pepper sauce was made with beef and chicken stock, onions, garlic, bell peppers, Roma tomatoes, toasted ancho, guajillo, and arbol peppers, cream sherry, honey, red wine vinegar, Mexican oregano, dry spices, corn oil and butter to emulsify.

Finished with pickled red onions, cilantro, green onions and cotija cheese.

Made some Mexican rice as a side.

Honest question.

What happened to Christianity?

As a note, I’m a double major in History and Religious Studies. Politically, I’ve always leaned just right of center. I was raised in a very British family that didn’t follow any faith but met Jesus at 13, during a very tumultuous time in my life.

As Rodney Stark argues in this book, Christianity grew during Roman rule because Christians did what others did not. They welcomed, loved and cared for everyone regardless of race, political, ideological or sexual preference, even to the extent of knowingly exposing themselves to plagues in order to care for the sick. Christian’s esteemed woman higher than any other mainstream group at the time and even allowed them to participate in many important roles in the early church, something that would have been restricted in any other institution.

Christianity has always been about service to others in submission and obedience to God.

I’m not trying to make this post too political, although I understand why some would want to bring up the current state of politics, but I’m genuinely asking other Christians, why does the mainstream Christian church look nothing like this?

Goldenear Triton 2

Picked up a pair of Triton 2 speakers and am pushing them with an Anthem MRX 740. The Tritons also have powered subs, but they are pretty weak. I’m thinking I may need to add some subs to get the bass I’m looking for.

Anyone else have this experience with these speakers?

Boxing is Rigged

As a former pro fighter, if you don’t think this fight was rigged, you don’t know boxing. 🥊 That stoppage was criminal. Worst I’ve ever seen. Bell was ahead on every score card. Not saying Mason wasn’t gonna win, but that was stolen.
