Need help deciding between ON/ON and ON/OFF toggle switches

Hi flyers, I'm building a switch panel and I'm not sure which toggle would be better. I'm mainly going to use this for IL-2 and MSFS 2020.

The switches will be for gear, lights, and other misc, stuff where a 3-way isn't necessary (though I will also be using 3-ways in the project).

The screenshot depicts where the 2-ways will go.

Any insight is much appreciated

Are ON/ON switches better or ON/OFF?

I’m building a flight panel and would like some insight into this before ordering toggle switches.

I know the tail surfaces are creating a lot of drag, but what else can be done? It has a counterweight at the front.

It pitches about 12 degrees standing still, and slightly levels out the more the thrust is applied.
Also, besides reversing props on either side, how can I make it turn sharper? The rudder barely does anything.

I tried dividing the balloon for pitch control but it failed.
