First time vortex wings (and hot dogs)…never going back

Ordered myself a vortex for my Weber recently and finally got to try it out for some wings, and I’ve got to say the hype is real. I used some Kingsford mesquite (skeet) briquettes, marinated the wings with olive oil and some Dinosaur BBQ Big Action rub, and put them on the grill. Halfway through the cook I brushed on some BBQ sauce on some (4 wings from 10 to 12 o’clock) and some sweet bourbon glaze on some others (6 wings from 4 to 7 o’clock) for a little extra variety. My God they were some of the best things I’ve ever cooked. I’d like to hear some of your favorite marinades/rubs/sauces/techniques because this might just be a new weekly thing for me and I want to try more.

Homemade joint

Made this little bad boy for lunch today. Shaved ribeye with garlic powder, onion powder, rosemary sea salt, pepper, and cooper sharp on a toasted mini baguette. Absolutely delicious.

Just getting back into charcoal, want to step up my game

So I have an old Weber kettle grill that has been in storage for probably 7 years (moved into new house and mother in law gave us her older gas grill, and with the new house craziness it just never got set up) that I finally brought out and get set up and I’m looking to step up my grilling game. I’m trying to figure out what sort of accessories/upgrades would be best to go with for maximum impact.

  1. New grates. Old grate is rusted to hell and back, so this is my #1 item. I’m stuck between cast iron grates and stainless steel. Which is the better option for ease of maintenance and best cooking?

  2. Considering a Vortex…seems like the best bet for easy kicking it up a notch cooking.

  3. Griddle plate…how well do these work with charcoal kettle grills?

Anything else I should look for? I already have a pizza oven kit, and the rotisserie kit is probably the next splurge item down the road. Any thoughts?

JB Weld Extreme Heat paste

Has anyone used JB Weld Extreme Heat paste to repair any interior grill parts? It lists grills as one of the uses on the packaging, but I’m not sure if they mean only the outside parts or if it would be safe inside. I’m not talking about any direct food contact, only in between the flame and the food (it’s on a proprietary design flame deflector that is no longer available for sale). It seems to me that it would be safe once it’s cured, but just want to verify before I use it.

Made some pizza for the family last night, a half pepperoni/half cheese (not pictured, for the kids) and this pepperoni supreme for me and the wife. Cheese all the way to the edge to create a nice crispy edge.
