Could I start out on a CB750 Hornet E-Clutch?

I've never touched a motorcycle before, but this is the one I really like. Should I start a smaller, used bike? I've heard people have started off with this bike and learned well, just slowly. I do have another vehicle, so knowing how to ride won't be something I need to master quickly.

I'll use it mostly for twisting backroad use, but I want it to do well on the interstate as well. I don't want to get a bike I can't control, but I also don't want to get one I'll be unhappy with! I really like the naked style, so if you have other suggestions, they would be appreciated!

Looking for a first bike!

Any advice or suggestions greatly appreciated!! I'm 5'1 and about 110 lbs.

I was recommended the Honda Rebel 300. I'm wondering if the Rebel 500 would be a better option, but I've heard that even that has trouble keeping speeds of 75-80. I was also recommended the triumph speed twin 900, which I thought may be a good option.

I like the CB750 Hornet for interstate use, but I've heard it's touchy and maybe not the best to begin with.

I'm mainly going to use the bike on winding town/back roads, but I am hoping to be able to comfortably use it on the interstate.
